What is wine country without cheese?
In the enchanting world of fine cheese, Philip Perseval and Desiree Young, the owners of Perseval & Young Cheesemongers, are sharing their cheesy secrets.
They gave Big Ginger from 103.1 Beach Radio a look around their store and storage facility which holds a significant amount of inventory.
“Our front cases are fully packed with cheeses, " Philip explained. "Generally, you're going to find 80 to 100 cheeses in the front of the shop. In the back of the shop, we've got the rest that make up the 500 cheeses that we carry."
This specialty shop not only offers a delectable selection of fine cheeses but also provides a solution for those who find it challenging to savor every bit of their pricey delights at home - a quote-on-quote cheese vault.
“We always say let us look after the cheese, whether it's a retail customer or a wholesale customer, we look after the cheese better than anybody else,” he noted. “People come in and they spend $500 worth of money on the fondue cheese. We'll keep it in the back, and they can just come back in and we'll just cut them off whatever they need throughout the season.”
Their most popular cheese of the season, is the Vacherin Mont d'Or. Preorders are placed in September, during which customers specify their desired quantities. The cheese then arrives in December ready for the holidays.
“This is from the Savoie region in Europe. It's basically fondue cheese. One container will feed four people,” Philip said. “Splash of wine on the top, a few little sprigs of garlic, maybe some rosemary, and you've got yourself a beautiful meal."
