This borscht is doing more than just filling stomachs

How one woman is helping Ukraine

It was an afternoon of calm chaos in Linda Edgecombe’s kitchen as a plethora of borscht was being prepared to sell to help Ukraine.

She told Kelowna10 the idea was spurred after watching what’s happening overseas and being driven to do something to support the people defending their country.

“I’m watching the news every day, looking at this catastrophe in Ukraine, and I feel helpless and what can I do?” Edgecombe asked. “I thought, ‘I’m going to make some soup and I’m going to see if anyone wants to do a fundraiser.’”

Despite only sharing the idea widely Thursday, orders have been flying in quickly.

After a trip to the grocery store, she immediately got to work.

“I will cook all through next week if I have to,” she said. “I got people ordering eight jars at a time, but I’m happy and excited.”

Edgecombe said she has Ukrainian family and friends, adding weight to the tragedy taking place in Europe.

“This is devastating to the kids, their families, the families being separated. It breaks my heart and hard for me to even fathom,” she said.

All the money raised will go to the Canadian Red Cross, with the federal government matching donations up to $10 million, until Mar. 18. Donations will support those impacted by ongoing conflict in Ukraine.
